Diamond Pub & Billiards owners Jared Matthews, Jeff Griffith and Norman Wilson have partnered again to launch a spin-off concept in the venue Mellow Mushroom is still moving out of. 

Diamond Street Grub & Hops will serve about 40 different craft beers on tap and street food from around the world. Don’t be surprised if you find some of the creative cocktails on the menu that Matthews is known for.

They bought the building from Mellow Mushroom owner Ryan Miller Monday, the day after Mellow Mushroom closed. They had begun the discussion the week before, and the deal is still being finalized with plans to be complete by May 15.

“It’s almost like Drake’s in that people think about going there for lunch or dinner,” said Matthews.” And around 10 p.m., there will be acoustic acts but this concept will use a lot of local farmers and products with quality chef driven street food. “

The menu will feature items like Thai meatballs, chicken on a stick, Chicago style hot dogs, street tacos,  Philly cheese steak, and Ramen. An executive chef has not been found yet, but Matthews will be selecting the dishes and creating the menu for a chef to follow.

They’ll change the decor inside to include entertainment, indoor shuffleboard, and pinball with pictures from the Diamond Pub Concert Hall. The vibe will match a street feel.

“My idea is to bring concepts to Louisville that haven’t seen before and work with concepts that are unique,” said Matthews, who also owns Lou Lou Food & Drink and Equus and Jack’s Bourbon Restaurant and Lounge with a silent partner.  â€śIn this new venue, I want families to feel comfortable to come in and have a great dinner as well as folks getting together to watch a sporting event while having a good beer.”
