After a year-long renovation of the Hilltop Theater, a defunct neighborhood movie house that has seen a number of other business tenants over the years, Brett Davis and business partner Mo Deljoo are now ready to open Red Herring Cocktail Lounge and Kitchen at1757 Frankfort Ave.

The redone interior has exposed brick walls and much of the original sculpted moldings, herringbone wood floors and a bright, colorful interior. Seating for over 100 customers will be available at the bar, at an upper-level mezzanine and on the patio on the side of the building. The drinks menu features 100 cocktails, both familiar classics and drinks newly devised by bar manager Clay Livingston, such as a basil melon Collins and a tequila gimlet, There will also be frozen drinks, including a Krispy Kreme boozy milkshake, a wine list devised by Davis, one of the city’s two Master Sommeliers, and regional draft beers.

Jacob Coronado, formerly with 8UP at the Hilton Garden Inn, is the chef who has devised a small menu of easy-to-eat-with-drinks food. Look for charcuterie of local meats with spicy pickled green beans, house-made mozzarella with flatbread, smoked BBQ pork bites, Nicoise salad lettuce cups, crispy chicken skins, Buffalo poutine with house-aged Bourbon barrel hot sauce and burgers and grilled cheese made with locally sourced beef and cheese.

Red Herring opens Friday, April 28, and will be open nightly from 4 p.m. until 2 a.m.
