Three new purveyors of Mexican food run the gamut, from a suburban Jalisco-style restaurant, to a taco outlet in Norton Commons, to a late-night burrito delivery operation in Germantown.

At 5637 Outer Loop, Juan Segoviano, owner of five local Senor Iguanas, has opened Don Juan Birria Y Carnitas, serving the style of food he knows from his hometown in the Mexican state of Jalisco (which also happens to be the seat of tequila production in Mexico. Segoviano intends to serve the things he grew up eating, including long-stewed goat (birria), pickled pigs’ feet and carnitas.

The bar uses only Herradura tequila for its margaritas, accented with ingredients such as fresh guava and tamarind. The guacamole has onions and serranos mixed in, an added spiciness common to Jalisco food.

Nate Sturdevant, Matt Filip and Robin Vandyke have opened New Wave Burritos, a weekend late-night burrito delivery service operating out of the kitchen at Eiderdown after regular restaurant hours. In the few months they have been in operation, they are making 70 burritos or more each shift, delivering them in a 2-mile radius of their Germantown headquarters between midnight and 4 a.m. every Friday and Saturday

The hard-working burrito crew have full time jobs elsewhere–Filip is sous chef at Eiderdown and Sturdevant works at Jimmy Johns. Their goal is to expand into their own space–serving for only 8 hours a week limits what they can achieve–so as they cruise around Germantown delivering, they keep their eyes open for a suitable space. Way out at Norton Commons, a growing restaurant hub will get a new member in the fall, when Citizen Taco opens at 10715 Meeting St. in September. Neil Morgan and his partner Alex Tinker plan to offer skirt steak and ceviche, as well as tacos, aiming for a Latin-inspired bistro. Citizen Taco will have a full bar too, with an emphasis on margaritas, of course.
