Colonial Gardens is in the news again. We already told you about El Taco Luchador and Union 15 beginning their restaurant operations in the historic, refurbished South End development. Now it has been revealed that Biscuit Belly also will open a location there, as well as many others in the years to come.

Louisville Business First’s Haley Cawthon spoke with Biscuit Belly’s owner, Chad Coulter.

Coulter said Biscuit Belly’s third location will be about 3,200 square feet and will seat about 80 inside, with more seating on the patio. It will employ about 15 to 20 people, and is expected to open in February or March of 2020. The restaurant is currently an empty shell and will need a full build out.

Beyond the two new locations projected for St. Matthews and Colonial Gardens, the Biscuit Belly brand is being prepared for liftoff.

Coulter said he aims to expand Biscuit Belly to 15 to 20 locations within the Kentuckiana area, noting that a fourth restaurant is on deck for Southern Indiana. Part of the explosive growth is triggered by the need to saturate the Louisville market, while also keeping up with consumer demand, he said.
“The concept has already been proven and from what we’ve seen, it’s created a level of fandom,” Coulter said.
