Monday, September 12th at 6:30 p.m., Brasserie Provence, 150 N. Hurstbourne Pkwy., will host a special dinner presented by La Chaîne des Rôtisseurs, “the oldest and largest international food and wine society devoted to preserving the camaraderie and pleasures of the table and to promoting excellence in all areas of hospitality arts.” The dinner is a tribute Roger Vergé, who was known for his contemporary Provençal cooking style. The dinner will begin with a cocktail reception followed by a 5-course dinner paired with southern French wines.

At the reception the canapés will include Mediterranean cocktails, tartines de roquefort aux noix (Roquefort toasts with walnuts), crème froide de coeurs d’artichauts (cold artichoke hearts in cream) and gâteau de lapereau en gelée du moulin (rabbit terrine).


The dinner will begin with Noix de Saint-Jacques aux Jeunes Poireaux (sea scallop and leek in vermouth cream), followed by Saint-Pierre des Pêcheurs du Suquet, (John Dory fillet in saffron tomato broth). The poultry course will be Fricassée De Poulet Aux Figues Fraîche (chicken fricassée, with fresh figs) followed by the main course, Carré d’Agneau Rôti au Poivre Vert, Réduction Naturelle, Tian de Courgettes et Tomates, (green peppercorn-crusted lamb rack, and zucchini-tomato casserole.) Dessert will be anis frozen parfait.
