FOKO at Logan Street Market (1001 Logan Street; menu here) is two years old, and having weathered the pandemic and built a foundation dedicated to “illuminating culture through food,” the “Foko Familia” is charting a course for expansion.
According to Dahlia Ghabour at the Courier Journal, “Foko is making some big plans for the future, setting into motion a new catering program, a sister bakery and even plans for a brick-and-mortar sit-down restaurant.”

Executive chef Paco Garcia and pastry chef Diego Hernandez have something in common beyond their Mexican heritage: They both got started in the culinary industry in Louisville as dishwashers.
You might still see them washing dishes at their Mexican-Southern fusion restaurant, Foko, because everyone at Foko is part of a family that does whatever is needed. But their artistry shines on the stove — or in the bread oven.
Foko’s current hours at Logan Street Market are Tuesday to Sunday from 8:00 a.m. to 2:30 p.m.
