Last Friday it was reported at Louisville Business First that Guaca Mole would be opening in NuLu in late February. However, the Facebook post in question disappeared, and accordingly the publication posted a correction to March 1 for Guaca Mole’s debut.

Guaca Mole, from Olé Hospitality Group, owner of Taco Luchador and Steak & Bourbon, will open March 1 at 900 E. Market St., the company announced Friday on Facebook. It’s taking the space that formerly was home to Rye on Market, which closed during the Covid-19 pandemic.

As of this morning, Guacamole Modern Mexican (which we are surmising will be the relocated restaurant’s NuLu-centric identity) posted again at Facebook, shifting the expected opening date back to February 22.

To summarize: it appears that Guaca Mole Cocina Mexicana will come to NuLu rebranded as Guacamole Modern Mexican, and will be open for business on February 22, unless the date changes again. This is not to critique restaurant or publication, because the current period of supply chain disruptions and labor force fluctuations makes opening day forecasts next to impossible in terms of accuracy. At this moment, we’re all aiming for ASAP.
