As part of  its Holiday Celebration, Brasserie Provence, 150 N. Hurstbourne Pkwy.  will host a 5-course sparkling wine dinner on Thursday, Dec. 10 at 6:30 p.m.

The reception will start with a Blanquette de Limoux, followed by three different Champagne Brut styles and a New Mexico Demi-Sec sparkling wine finish.

Chef Bacci’s menu will include roasted quail clefmontaise (in a white raisin cream sauce), trout joinvillaise with shrimp sauce served on a citrus arugula risotto, and wild boar loin chop with chanterelles and an apple reduction. Dessert will be an exotic fruit Champagne sabayon.

David Dubou, wine specialist from Vintner Select, will provide detailed information on the wine pairings with each course.

The price will be $95. Dinner guests will be able to purchase all of the wines through Westport Whiskey and Wine at a 15% discount.
