Next Monday, July 30, La Chasse will join forces with Cruzan Rum to present a five-course Cruzan-inspired meal. Most of the cocktail pairings will feature the private label Cruzan barrel La Chasse selected a few months ago. The dinner begins at 7 p.m. and is $75 per person plus tax and gratuity. Reservations can be made by calling 502-822-3963. The menu was designed by the creative collaboration of Executive Chef Kristina Dyer and mixologists Isaac Fox (La Chasse owner) and Shelby Caldwell (bar manager).

“We’re always excited to host cocktail dinners, but having our own private label makes it even more special and personal,” said Fox. “We also host wine dinners, but then you pretty much have what is in the bottle. With the cocktail dinners, I feel there is a more creative and collaborative process where we can sit down together to craft the food to match the a custom and unique cocktail. That’s a lot of fun. Add the tasting of a rum that you can’t get anywhere else, and I think that makes it really exciting.”

First Course

Venison Sausage, Soft Boiled egg, herbed crouton, spiced maple, whole grained mustard aioli, everything spice, madeira reduction

Paired with Cruzan Negroni: Cruzan “La Chasse” Single Barrel Rum, rosemary infused Gran-Classico, Madeira

Second Course

Chickpea Cake, heirloom tomato-ginger chutney, cucumber and roasted garlic labneh, sesame, basil

Paired With Curried Favor Cruzan Silver Rum, curried cantaloupe shrub, lemon, cilantro, Hella Ginger bitters, kummel rinse

Third Course

Charred Spanish Octopus, chorizo-avocado mousse, grapefruit gastrique, pomegranate seeds, micro basil

Paired with Cruzan Brown Derby – Cruzan “La Chasse” Single Barrel Rum, grapefruit, local honey lime syrup, muddled basil, Peychaud’s bitters

Fourth Course

Smoked braised buffalo short ribs, carrot puree, balsamic, cippolini onions, horseradish creme fraiche

Paired with Smoked Rum Manhattan -Lapsang-souchang infused Cruzan “La Chasse” Single Barrel Rum, sfumato rubarbaro, Cocchi Vermouth di Torino, Angostura Bitters

Fifth Course

Fermented banana and chocolate pudding tart, dulce la leche, toasted coconut
