Melba’s Culinary Canvas hopes for a February opening downtown
Owner Charles Reed explained.
“I’m not trying to hang my hat on a chicken wing or a beer or a brewery or a burger — I’m trying to hang my hat on a full culinary program that offers diversity,” he said. “I’m just trying to do things that are delicious. I just want people to walk out of there and say, ‘that was really good.’”
Three years have passed, and Reed and his restaurant are on the move to the former quarters of Toast on Market (620 E. Market Street in NuLu).

(Charles) Reed said he plans to focus on his dinner program at the new location, something he struggled with growing in Downtown Louisville.
Before he opened Melba’s in 2019, the Colorado native ran upscale restaurant called Henry’s Place on Brownsboro Road with his brother-in-law Pat McGinnis. Reed said he plans to bring some elements of Henry’s Place into the new Melba’s.
“There is one thing I’m going to be doing here that I didn’t do on Jefferson Street,” he explained. “I’m going to do a dry-age beef program here. I used to own a restaurant called Henry’s Place, where I did my own dry-age program. I did dry-age New York [strips] and dry-age ribeyes. I want to do that too. I want to sell a good steak.”
