In recent weeks, quite a number of mid-market restaurant chains have announced plans to openĀ  outlets or expand their current operations in the Louisville area Here is a list of the news of upcoming new chain operations that has been accumulating.

  • The third area Potbelly Sandwich Shop has opened in Jeffersontown at the corner of Taylorsville Rd. and Hurstbourne Pkwy.
  • First Watch, a breakfast and lunch concept headquartered in Florida, is planning to build its second Louisville location at the corner of Breckenridge Lane and DuPont Rd. The first Louisville store is at 201 S. Hurstbourne Pkwy in Jeffersontown.
  • Noodles & Co. is planning to build its third location at Cardinal Towne, near the University of Louisville’s Belknap campus, at 310 W. Cardinal Blvd. The menu includes noodles and pasta from Italian, Asian and American cuisines, as well asĀ  with soups, salads and sandwiches. Noodles & Co.’s other Louisville locations are in Plainview Village, 1225 S. Hurstbourne Pkwy., and at the Paddock Shops, 4302 Summit Plaza Dr.Ā 
  • Steel City Pops, an Alabama-based gourmet popsicle company, is reportedly moving into the Highlands, at the site of the former Wild and Woolly Video store at 1021 Bardstown Road. Steel Cityā€™s ambitious plans for for the Bardstown Road store, its first, to serve as the commissary kitchen for any additional Louisville locations. Insider Louisville reported that the company thinks the Louisville and Lexington area can support up to five locations. The first store is expected to open March 1.
