Chef Fernando Martinez’s Olé Restaurant Group’s popular quick-serve restaurant, El Taco Luchador, purveyor of fresh, tasty tacos, tortas and Latin side dishes, will open the highly-anticipated second location at 112 Meridian Ave. The space across from Trinity High School had long been the Meridian Café.

The menu features ten variations on tacos and tortas, the filling Mexican sandwich; the new store will add salads as well. The new location is larger than the original Highlands location on Baxter Ave, open since 2013. The restaurant will seat a total of 130 and features a lighted outdoor patio. There will be a full bar, serving cervezas, margaritas and sangrias.

The completely renovated building now sports large and copious paintings of luchadores, masked Mexican wrestlers, both inside and out.  It will be the eighth restaurant operated by Olé Restaurant Group, an eclectic variety that includes Guaca Mole Cocina Mexicana, Mercato Italiano, Mussel and Burger Bar and Red Barn Kitchen.
