The most recent interesting news on the soon-to-be-reality (we hope) grapevine is the sudden formal announcement in all the local media about Yang Kee Noodle opening its third location in old KFC Eleven location at the BaxterAve.-Bardstown Rd. point in the Highlands. This comes on the heels of opening the second Yang Kee Noodle out in Middletown Commons, after many years of contentedly operating just one pan-Asian fast-casual site in Oxmoor Center.

Inspired by traditional noodle houses ubiquitous throughout Asia, managing partner Dan Huckestein and chef-partner John Castro have found their create-your-own stir-fry dishes by mixing ingredients, flavors and sauces a steady success. Their second store in Middletown has been equally successful, according to the partners.

In a news release, Huckestein said, “We couldn’t be more excited to be moving into this iconic location that is viewed by so many Louisvillians as the gateway to the Highlands. We think our local pan-Asian concept featuring bold, exotic flavors will be a great fit for the neighborhood.”

Construction on the Highlands Yang Kee Noodle location is expected to start in September. Expect it to look nothing like the KFC Eleven concept store that it is replacing, inside and out.
