In the beginning, back in 2018, there was a food truck that came inside.
More than four years later, a change has come.
***BIG NEWS***Red Top brick and mortar will be closing permanently. We will be open tomorrow Wednesday September 21st from 4:30pm-10pm for our final shift of service. As wonderful as this ride has been, it is time to shift our focus back to our true passion, the food truck. We have big plans ahead for our mobile unit. We will continue to be around Louisville slinging the best hotdogs in Kentucky. We love our customers. We have been honored to serve and look forward to the ways we will grow moving forward. Thank you for the years of support and good vibes.
As it turns out, change is ongoing, and the evolution of the Shelby Park neighborhood has impelled Red Top’s own strategic planning. As usual, Michael L. Jones gets to the bottom of it at Louisville Business First.
Small Plates: Red Top Hotdogs owner has something new in the works
Many local foodies were concerned when Red Top Hotdogs abruptly closed its brick-and-mortar restaurant at 1127 Logan St. in Shelby Park earlier this week.
But owner Ryan Cohee told me his business had to evolve to survive in the current climate for independent restaurants.
“I decided that I’m switching the Red Top to food truck, and this winter, I’m going to build a second one to have two food trucks,” Cohee said. “And then I’m going to reopen — hopefully at the space where I am now — on Jan. 1 with a new concept that is to be determined.”
Specifically:
Since Cohee opened Red Top in 2017, the food and beverage scene in Shelby Park to include Logan Street Market, Atrium Brewing, Toasty’s Tavern, Square Cut and Trouble Bar. Cohee said he wants to come up with a concept that will complement the other establishments in the area.
“I feel that Shelby Park has outgrown Red Top, if that makes any sense,” he explained. “When I moved there four years ago, it was a great fit, but now I feel like I’m misutilizing that building with just a hot dog place.”
