While chains specializing in salad lunches, such as Chop Shop Salads, have not fared well in the competitive restaurant market here, four local restaurateurs, Joey Mascaro, Jordan Doepke, Matt Petty and Chris Furlow are preparing to open their own version, Green District, at 126 Breckenridge Ln., in a space that had been a Chop Shop Salads outlet.
The four owners think that there is room for a well-run healthier-option food operation to succeed. Green District will be a quick-service restaurant, with several menu options, as well as a “build your own salad” option. They can then watch their creation being constructed while they wait. House-made soups and wraps will also be offered.
Green District will join Vinaigrette Salad Kitchen in the fast-casual salad market. That Lexington-based chain is opening a store, also in another former Chop Shop Salads location, at 203 N. Hurstbourne Pkwy.
