Bar Vetti team to open French bistro in the Highlands
M. Peppers is a new concept from the team behind bar Vetti inside NuLu’s AC Hotel. The ownership group includes chef Andrew McCabe and restaurateur Ryan Rogers, co-owner of Feast BBQ and Royals Hot Chicken.
In a recent interview, Rogers told Louisville Business First that the new bistro is an homage to classic French cooking, but he hopes it becomes a regular neighborhood gathering place rather than a special occasion restaurant.
“We really want to be a restaurant where people from the neighborhood feel like they can come here on a weekday like you would at a bistro in France. If you live in Paris, you have a small place, probably with a small kitchen. You eat out a lot, because cooking at home is really not that great sometimes. So, you go to the neighborhood bistro,” Rogers explained.
Rogers offers the coda.
“We are all looking for experiences that make us feel connected with our community, and I think those certainly happen in an atmosphere where you have service, and you have a great bar where you can connect with your neighbors. We certainly want to be that kind of place.”
