Jones introduces us to Cathy Crowder-Johnson, director of the culinary program at Jefferson Community and Technical College, and outlines her plans to convert a former church building 1130 S. Eighth St. into a combination restaurant and food incubator.
The start-up has yet to be named, so we may be back to update this post (probably after Michael updates his ā insert smiley face).
New restaurant, incubator coming to Limerick neighborhood near Old Louisville
Crowder-Johnson said the restaurant will serve as a food incubator for her former students who are making the transition from school to the professional culinary world.
āI want them to have a starting place where they can go test their menu, test the pricing of their ingredients and everything. So, just the next step. Itāll be set up where they control the menu. They can run the restaurant for six months. But I will always have the basic Southern foods on my menu, and let them add maybe three to four dishes.ā
In 2022, Crowder-Johnson worked with the nonprofit Feed Louisville to set-up an internship program so her graduating students could get experience working as a lead chef in a kitchen.
