The new shopping center, Madison Station taking shape at 11615 Shelbyville Rd, on the corner of Madison, will be the site of the second location of Coals Artisan Pizza, which has established a solid fan base at its first St. Matthews store in the Vogue Center complex.
The new Coals Pizza place will be opening after Labor Day, according to latest estimates (putting on the finishing touches to an eating establishment always seems to take longer than anyone wants). This second outlet will seat up to 120 people, and also have a small patio.
What makes Coals Pizzas different (aside from the names of the pies, dubbed for various Louisville-area neighborhoods, and composed of some unusual ingredients, such as fig jam, fennel sausage and piquillo peppers) is the anthracite coal-fired ovens that reach 1000 degrees and bake the pies in less than five minutes.
The unusual high-temp ovens require some time and care to master. The new store will be staffed with experienced pizza makers who know how to handle the high temperatures and timing.
