The fourth area location of Con Huevos opened this week at 2125 S. Hurstbourne Parkway, with a fifth coming soon. The hours are Monday through Friday, 7:30 a.m. – 2:00 p.m., and Saturday and Sunday, 8:00 a.m. – 2:30 p.m.

Con Huevos continues to expand despite challenges in restaurant sector
Jesús Martinez, co-owner of Con Huevos, said having a family-run business can be an advantage in a restaurant industry dealing with inflation and widespread staffing shortages.
Despite pressures from increased labor and food costs, Martinez said the local, fast casual Mexican breakfast chain is in the process of expanding because of the stability he and his wife Izmene Peredo have maintained in all aspects of the business.
