Elderberry Provisions, a new cafe and catering business, is coming to 3909 Chenoweth Square, home for 47 years to the original Cheddar Box before it closed in January. Yet again, Michael L. Jones has the whole story at Louisville Business First.
Elderberry Provisions to open cafe in former Cheddar Box location in St. Matthews
Tim Dulac, co-owner of Elderberry Provisions, said the new restaurant will build on the legacy left by The Cheddar Box owner Nancy Tarrant.
“We’ll still stay very consistent with what was originally here as far as catering, takeout sandwiches, prepared foods and so forth. But I think the concept is more of an upscale vibe,” Dulac explained. “There’ll be like grilled vegetables, orzo pasta salad and grilled meats. It’s more of like my style. Things you don’t necessarily have to heat up. But I think it still needs to stay very true to Louisville because Louisville likes its traditional items.”
Dulac’s daughter Brittany is moving from Los Angeles, where she worked as a private chef, to Louisville to operate the restaurant.
Elderberry Provisions has a web site in the making, as well as an Instagram page, where the traditional Louisville spring opening regimen makes perfect sense: “We will open our doors this April, in time for Derby.”
