The Good Belly Food Truck is being transformed into Good Belly Sandwich Shop as owners Jessica Bookin and Jeff Williams swap mobility for residency at the former Silly Axe Cafe (Dundee Loop; 2216 Dundee Road Unit 7).

Here’s the text of the Instagram announcement.

It’s official! We are transitioning from our food truck into a brick and mortar! We are thrilled to be part of the #douglassloop and to be in The Loop Mall at 2216 Dundee Rd. We cannot say thank you enough to everyone who has been in our corner over the last two years and to our amazing customers! To have a permanent home for a business we love is such a joy!! We’ll be working our tails off over the coming months and will hope to be open in a couple of months. This NY-style Jewish deli sandwich food truck is opening a storefront. Here’s where

The New York-style deli sandwich food truck was founded by Jessica Bookin and Jeff Williams, who met working together in North Carolina. The shop is known for its pastrami and corned beef, which takes three weeks to make in-house, according to the website.

Bookin said the food truck space restricted the menu items Goodbelly could produce. The new restaurant will allow them to expand the offerings to include more sandwiches, specials, sides and even a meat-by-the-pound deli case.

“We were in Chef’s Space for our commissary before this,” she said. “This is a huge step for us. I think our customers have been waiting for this, and I’m excited to have this space for people who have come to love us and to meet more people.”
