A salbut is a puffed deep fried tortilla that is topped with lettuce, sliced avocado, pulled chicken or turkey, tomato and pickled red onion. Salbutes originate from the Yucatán peninsula and are a staple in Belize. Salbutes are mostly sold in the evenings when parties of friends or family go out to eat. (source: Wikipedia)

However, other edibles will have to suffice in 2023, because Mayan Street Food at Gravely’s craft beer campus (514 Baxter Ave.) will cease at year’s end.

A sister concept to @mayancafenulu, Mayan Street Food was founded as a food truck serving street food originating from Chef Ucán’s native Yucatan peninsula. Gravely sought out Mayan as their food partner for its strong reputation of quality food and local sourcing, as well as paying homage to Ucán’s start as a food truck in 1996, arguably the first food truck in Louisville.
In the same timeframe, Mayan Café Catering has rapidly grown over 5x since 2017. They now work at over 20 preferred catering venues around the city and specialize in bringing restaurant quality food to events large and small.
“We have truly enjoyed working with Nathaniel and his whole team over the last 5+ years,” said Shadle and Ucán. ”It’s been so great to expand our audience to a new market and to grow our staff and provide opportunities to develop more cooks. We wish Nathaniel and the Gravely family much success as we shift our focus to our expanding catering department and growing restaurant.”
Despite Mayan Street Food’s departure, the physical food truck will remain on-site at Gravely Brewing and reopen operations with a yet to be announced, new food partner in Spring 2023. 👀
