Aside from shifting to more take-out and sidewalk dining, these firms developed new channels of distribution, product forms, items and sizes, audiences, geographies in which to sell, and packaging. These new lines of business are likely to endure and continue to grow post-Covid.
To spotlight a local example of mutually beneficial collaboration, Volare Italian Ristorante’s reopening earlier this week came with the addition of a new menu item featuring a well-known Kentucky Proud product.
Cappesante scallop antipasto features seared U-10 sea scallops with over sweet potato puree with crispy prosciutto, toasted almonds and brussels sprout slaw. The dish includes Dan-O’s Seasoning, a low-sodium and all-natural seasoning.
It’s a creative collaboration between Volare’s Chef Joshua Moore and Dan-O’s founder Dan Oliver. “The (antipasto) will be featured on the restaurant’s winter menu,” according to an information release. “The partnership between Volare and Dan-O’s was the perfect opportunity to highlight two Kentucky small businesses both working through the challenges of the current pandemic.”
Volare is located at 2300 Frankfort Avenue, and upon reopening this week has implemented a reservations-only seating regime.
