When Kristina Addington announced her popular vegan restaurant would close, she encouraged followers to stay tuned for a “new project.”

Addington shut down V-Grits after at Logan Street Market in Shelby Park on Dec. 15 after 10 years.

A few days later, Addington announced the launch of VegKentucky, a nonprofit “dedicated to promoting plant-based living,” according to a press release.

A mission statement appears at the non-profit’s web site.

Through workshops, outreach programs, and local partnerships, we aim to make plant-based options an accessible staple for every Kentucky resident, fostering a healthier and more compassionate future for our state.
