Small Plates: New sushi restaurant Anko opens in Beechmont
The new restaurant had its soft opening on Jan. 18. Prior to opening Anko, owner Anh Le was a general manager and sushi chef at Hiko-A-Mon in Westport Village for 10 years.
“Anko is my name in Japanese, but it’s also a name for a red bean paste they use for desserts in Japan,” Le explained. “That’s why I chose it. My plan was to open a restaurant, but no landlord would give me an opportunity because I didn’t have experience in business. Fortunately, my friend owned the StrEatery and he gave me the opportunity to be a small vendor here.”
