A few weeks into his new position as executive chef of The Brown Hotel, 43-year-old Josh Bettis says he’s keeping life simple: working and going home.
He’s eager to get out and dine at Louisville’s numerous restaurants, but for the foreseeable future, the only food he’s focused on is that coming out of The English Grill, J. Graham’s Café and the historic hotel’s banquet room.
Oh, and the food his wife, Summer, makes him after a long day. Bettis told Insider Louisville recently that she’s a dandy cook and a great dinner date.
So what’s his plan of action at the Brown? To modernize The English Grill’s grub a bit, make connections to local food resources, and leave not touch one of the city’s true dining treasures, the Hot Brown. Sounds like a great start.
