Starting this month, the too-long empty former KFC Eleven building in the conspicuous triangle between Bardstown Rd. and Baxter Ave. will undergo its transformation into the third outlet for Yang Kee Noodle, the pan-Asian fast casual restaurant owned by Dan Huckstein and John Castro. If construction and remodeling go as planned (and we know that that always happens), the restaurant should open shortly after Easter.
In an Insider Louisville report that ran some design drawings of the building, Huckstein explained that after considerable consideration, they made the decision to gut the building and redesign it from the inside out.
There will be patio seating with a retractable patio cover and fire pit tables, a walk-up window for to-go orders or patio ordering without coming inside and, of course, interior seating for up to 90 customers.
