The long-empty site of Ferd Grisanti’s is getting a new tenant this spring — Loui Loui’s Authentic Detroit-Style Pizza.
If you’re wondering what that is, it’s a pan style pizza using a thick, but lights and airy dough to support sauce, cheese toppings and a bit more sauce. It’s baked in a pressed steel pan that helps fry the surface of the crust nicely.
Detroit native Michael Spurlock is one of the investors who believes the time is right to have Detroit-style pies here. The restaurant will center on pizza, but will serve a menu of casual Italian specialties, such as arancini. Expect pastas and salads as well.
If you’ve got your fork and knife at the ready, just put ‘em down for a spell. Spurlock said his crew is shooting for an April opening. We’ll be ready then. Read more at Insider Louisville
