Gustavo’s Mexican Grill offers “bold Mexican flavors.” Everything you would expect — fajitas, burritos, tacos — but also vegetarian options, house specialties like enchiladas verdes, chimichangas, shrimp tacos and pollo feliz (grilled chicken with chorizo and pineapple).
Reporting at Louisville Business First, Michael L. Jones has news of a relocation in store for the Prospect location of Gustavo’s, with a target date of early April.
Gustavo’s Mexican Grill to relocate Prospect restaurant
Gustavo’s Mexican Grill is relocating its Prospect restaurant this spring.
The locally owned Mexican chain is moving its restaurant from the Kroger-anchored Prospect Village Shopping Center at 6051 Timber Ridge Drive to a new, 5,000-square-foot standalone location with an outdoor patio at 8909 US-42, next to the First Baptist Church of Prospect.
Owner Gustavo Reyes tells Jones that the new building’s design from the ground up is meant to provide a space with positive energy: “Each area will have its own unique identity with a lot of playful colors, traditional artwork and unique fabrics. The ultimate goal is to create a space that the whole community can enjoy.”
