Odd Bird Bakery is a Quills Coffee project currently under way at 1021 Bardstown Rd. in the heart of the original Highlands. The storefront was home to Steel City Pops until 2021.
F & D’s founder/publisher John Carlos White took these photos, but little solid information is available at present apart from this introduction to an employment listing for general manager at the new bakery.
Established in 2007, Quills Coffee, led by Nathan Quillo and his partners, boasts eight locations in Louisville, KY, and one in Indianapolis, IN. Known for its thoughtful approach to coffee, Quills collaborates with producers worldwide, ensuring high-quality, ethically sourced beans. The welcoming atmosphere and commitment to inclusivity have earned Quills accolades, including being named the best coffeehouse in the mid-U.S. at Coffee Fest in Chicago in 2015. Quills will soon launch an in-house sister brand, Odd Bird Bakery. The bakery will provide freshly made pastries to the Louisville locations and welcome guests inside the retail cafe space.
The Odd Bird opening is slated for summer, which I’m inferring is very near if this week’s escalating temperatures are any indication.
