Since last summer, the Bristol Bar & Grille in the Highlands, 1321 Bardstown Rd., has been tending beehives on the roof. The first harvest of those hives has been processed, and during the month of January, chef Austin Wilson will offer daily specials made with honey from the hive on the restaurant’s roof.
Four gallons of honey as locally harvested as is possible was spun out of the hives at the end of last season. Chef Wilson’s dishes will include honey sriracha beef stir fry, Asian honey-glazed grilled chicken and white chocolate Pots de Crème with honey strawberry preserves. The specials will continue throughout the month, or until the 2015 honey harvest runs out.
