Thursday, Oct. 23, 7-9 p.m., Varanese, Frankfort Ave., will host a wine dinner featuring pairings of wines from the portfolio of Constellation Brands. Bob Valvano, sportscaster, former basketball coach and brother of the late Jimmy Valvano will be the guest to talk about his career, his brother, and The V Foundation which supports cancer research.
A portion of the proceeds from the wines purchased by Varanese, as well as $10 from the cost of the dinner will be donated to The V Foundation, and Constellation Brands will match the donation from this dinner.
The menu: First course–Wild Horse Viognier will be paired with orange fried rock shrimp with spicy peanut dressing. The second course will be warm butternut squash salad with hazelnut vinaigrette. The wine will be Simi Chardonnay.
The third course will be house-made wild boar sausage topped with fried egg and leeks, paired with Wild Horse Pinot Noir. The fourth course, short rib Bolognese served over a four-cheese ravioli, will be paired with Ravenswood Besieged.
The main course, served with Simi Cabernet Sauvignon, will be sous vide strip steak over parsnip puree. Dessert will be blackberry-chocolate chunk cheese cake with a granola crust. The wine will be Estancia Cabernet Sauvignon.
