Thornberry’s Deli and Pie Shop closed its South End location ten years ago, but now The Bakery Hub is taking a new-school approach to filling the old-school Thornberry’s gap by operating a ghost kitchen from the premises of B.A. Colonial in Colonial Gardens (818 W. Kenwood Dr.), using recipes from the former Thornberry’s to craft baked goods, including cookies, pies, cakes, and a new line of “loaded” brownies, and vending them from B.A. Colonial’s space until sales support a move to permanent quarters.

The Bakery Hub carries on the legacy of Thornberry’s Deli and Pie Shop at Colonial Gardens

Ester Jackson, co-owner of the Bakery Hub, is the granddaughter of Thornberry’s founder.

After her family’s business closed, Jackson began making Thornberry’s baked goods for customers in her Sheperdsville, Kentucky home, but she was always looking for ways to return to South Louisville.

Two years ago, Jackson started emailing her family’s history to Colonial Gardens developer Jeff Underhill to inquire about finding a home in the redeveloped beer garden.

Underhill introduced her to Shay Tinsley, owner of B.A. Colonial, and he worked out an arrangement with Jackson.

(Jackson’s partner in the business is Jessica Schmiedeler, who started working at Thornberry’s when she was 16. Schmiedeler has since gone on to a career in marketing.)
