One thing that Covid taught us, the food and beverage industry, is about the balance of life. You know, our business is very demanding. We work a lot of weekends. We were able to attract a great pool of employees because of the breakfast and brunch hours. They wanted that balance of life too.
Wally’s is Laurent Géroli’s new restaurant in La Grange (1220 Market St.), opening later his month, and his business hours tell the whole story: 7:00 a.m. to 2:30 p.m., Wednesday through Sunday, serving breakfast all day, and happily reclaiming a former Beef O’Brady’s building for independent brunch operation.
As the new restaurant’s founder and longtime local culinary presence Géroli told our friend and former colleague Michael L. Jones, specializing in brunch is a purposeful choice reflecting the state of the industry and his chosen place of residence.

Although he has spent most of his career working in hotels, Géroli said the plan was always to eventually open his own restaurant.
“When I was 23, I was drawing up plans for a bed and breakfast,” the chef said. “For the last years, I’ve been questioning what I wanted to do. Me and my wife, we decided it would be special to be able to do something in our own town. We’re going to be a breakfast place with a little touch of a trained chef.”
