In Mexico a “Luchador” is a masked professional wrestler, whereas in Louisville “El Taco Luchador” is a unalloyed phenomenon.
The fourth El Taco Luchador taqueria opens at 9204 Taylorsville Road in Jeffersontown tomorrow (July 17), with another coming to Colonial Gardens later this summer.
A highlight of the current print edition of Food & Dining Magazine (Summer 2019) is Michael L. Jones’s in-depth profile of Fernando Martinez, founder of El Taco Luchador and a partner in the prolific Olé Hospitality Group.
“We have big dreams for our company,” Martinez told Jones. “We want to be a big player in Louisville. One day we’d like to venture outside Louisville, especially with El Taco Luchador. That would be a big way to grow for our company.”
“(The) J-Town location has been in the works for a while,” added Olé Hospitality Group partner Rick Moir in a news release. “Everyone in the area seems to be very excited, not only about the tacos but also about the fact that we’re locally-owned and operated.”
El Taco Luchador’s menu features fresh, cooked-to-order tacos and Mexican “torta” sandwiches, with salads and sides like “elote callejeros” (grilled corn on the cob with mayo) and cotija cheese and chile pequin.
