About a year ago 610 Magnolia’s owner Edward Lee and executive chef Kevin Ashworth. built a greenhouse on the restaurant’s property. After some time getting to understand what they can grow, they are now ready to take their vegetable-growing knowledge and make a dinner. On Friday, Feb. 3, they will prepare a chef-driven vegan dinner at the Wine Studio, across the street from the restaurant at 610 W. Magnolia Ave.
The Fêtes de Vegetables dinner will include passed canapés; daikon wrap; lentil soup with curried potatoes, crispy shiitakes, spiced soy yogurt, and cilantro; five-spiced fried tofu with vegan demi, smoked sweet potato puree, black eye peas, pomegranate, and pickled celery root; and a for dessert an apple tart with cinnamon ice cream (made with coconut milk and tofu), hazelnut, apple chip, and apple butter.
The dinner will be $50. Wine pairings and a selection of alcohol-free mocktails will be available at an extra charge.
Dinner guests will be invited to visit the greenhouse, and even pick something from the raised beds. Lee’s goal is to have his diners see vegetables in a new light.
