Consider if you will a recent phenomenon wherein restaurant concepts originating elsewhere arrive in Louisville, not in their more familiar manifestation as cookie-cutter chains and franchises, but as distinct spin-off indies.
There was Pig Beach out of Brooklyn, which opened down by the river in the summer of 2023.

More recently, a local iteration of Savannah’s Hop Atomica opened in Germantown and seems to be receiving solid reviews.

Now another Brooklyn-based concept — pizza and bagels occupy a vast expanse at the center of my own target — is coming soon to 1553 Bardstown Road. Construction has started, and there is no firm opening date.
The verdict?

Wheated, a Brooklyn-based pizza restaurant, opening in former Home Skate Shop, by Michael L. Jones (Louisville Business First).
Wheated was founded by David Sheridan at 905 Church Ave. in Flatbush, Brooklyn in 2013. The restaurant offers pizza with three distinct styles of crust, award-winning bagels and handcrafted cocktails.
The restaurant’s name is a reference to both wheated bourbon and pizza dough. Sheridan is a Brooklyn native, but he lived in Louisville until he was in high school.
Wheated Louisville will be co-owned by Sheridan’s longtime friend David Rathke. Wheated Louisville LLC, which is registered by Rathke, filed an application for a liquor license at the Bardstown Road location in November.
