April Absinthe is the name of the monthly special coming to neighborhood Comfy Cow outlets, compliments of a witty business collaboration with Copper & Kings American Brandy Co., 1121 E. Washington St. in Butchertown. The new flavor has a sweet cream base, dotted with Callebaut dark chocolate pieces and a swirl of Copper & Kings Absinthe Blanche-spiked orange curd.
Not due in the stores until April, the absinthe-swirled flavor was tested at the March Flea Off Market to happy approval. Comfy Cow has experimented with alcohol-added ice cream concoctions before, offering some concoctions such as the Raspberry Rave, made with Chambord, fresh raspberries and vanilla ice cream, and the Black Forest milkshake, with chocolate cherry liqueur, kirschwasser, chocolate cookie crumbles and vanilla ice cream, offered at a book signing for the “Adult Milkshakes” cookbook.
Comfy Cow now has five stores in Louisville and Southern Indiana, its packaged ice creams can be found at Louisville Whole Foods and various restaurants and specialty stores, and three more stores are set to open next spring in Middletown, Clarksville, IN, and Brentwood, TN. A new production facility in Portland will provide wider distribution for the Comfy Cow brand in larger retail markets.
