Steak & Bourbon’s (Westport Village) founding aim is described at the restaurant’s web site in a passage which is about to be revised; italics are the author’s.
Chef Fernando Martinez says “our goal is to provide the East End of Louisville a locally-owned premium steakhouse experience at an affordable price. We don’t feel that people should have to go downtown to a chain steakhouse to get great service and amazing food. We want to be Louisville’s hometown Steakhouse, and we think the city will love our twist on the classic American concept.
That’s because Steak & Bourbon’s second non-chain location is coming downtown, and the steakhouse game in the city’s central district is emphatically “on,” happily contradicting the prevailing “downtown doom and gloom” narrative.

Olé Hospitality Group plans to open a new Steak & Bourbon restaurant at 115 S. Fourth St., near the intersection of Fourth and Market streets, in July.
The nearly 10,000-square-foot space was previously occupied by Z’s Oyster Bar & Steakhouse Downtown, which closed in 2017.
Rick Moir, managing partner of Olé Hospitality Group, said his company has had a lease on the property for a while, but he and his team were motivated to move forward with the new restaurant by the opening of Derby City Gaming in December.
