In 2018, Con Huevos made People magazine’s list of best breakfasts in every state, tilting the selection process with the eatery’s signature Chilaquiles Con Huevos: corn tortilla chips, tomatillo green salsa, crema, pickled onions and queso fresco topped with fried eggs.
Chilaquiles Con Huevos will be on the menu September 12 when Con Huevos Craves debuts downtown in Falls City Market, the Omni Hotel’s “community gateway” and food court.

Business First’s Haley Cawthon spoke with Izmene Peredo and Jesus Martinez, owners of Con Huevos, who revealed a slightly modified approach for Con Huevos Craves.
“The opportunity was a little bit different than the business model that we have right now,” Martinez said, noting Con Huevos Craves will focus on a grab-and-go model.
To adapt to the new model, Martinez said they have slimmed down Con Huevos’ traditional menu offerings and added new breakfast sandwich options.
“We are bringing a whole new line of breakfast sandwiches and really plan to bring the quality to a new level,” he said.
In addition to four new sandwich options, Con Huevos Craves will have many of the most popular menu items served at the other restaurants, such as the tres leches pancakes, chilaquiles, Cuban coffee and Mexican Coke.
Con Huevos Craves hours will be Monday through Friday from 7:30 a.m. to 2:00 p.m., and 8:00 a.m. to 2:30 p.m. on Saturday and Sunday.
