Thursday, March 5, at 6:30 p.m., Porcini, 2730 Frankfort Ave, will offer a special dinner pairing chef John Plymale’s Italian dishes with wines made by Peter Franus from grapes he selects from vineyards throughout Napa Valley, California. Franus will be the dinner guest, speaking about his winemaking philosophy and discussing his pairings for the meal.
The meal will begin with a tasting of Il Follo Prosecco at the reception. The first course will be pan-seared prawns on a cold couscous salad, paired with 2012 Peter Franus Sauvignon Blanc.
The second course will be spicy pork ravioli with apple butter and balsamic reduction, served with 2012 Peter Franus Zinfandel. The main course will be beef roulade with mushroom and goat cheese stuffing, butter-braised leeks and crispy Brussels sprouts, paired with 2012 Peter Franus Cabernet Sauvignon.
The 2011 Peter Franus Merlot will be served with the dessert, blackberry crumb cake with spiced chocolate mousse.
